How can the University of Michigan successfully implement weekly meatless meals in the dining halls?

What is a Meatless Meal?

A meatless meal is a meal that excludes chicken, beef, pork, or fish and meat products such as stocks or animal fats. This does not exclude dairy or egg products. 



Substitutions to meat include tempeh, tofu, burger crumble, and other soy products.



*Implementing a meatless meal once per week can help college students reduce their carbon footprint and live a healthier life. 

 

Drawing on the social sciences, we are able to determine the value of a meatless meal and how to implement this in a dining hall setting.

4.5% more greenhouse gases are produced worldwide by animal farming than by transportation.

20% reduction in meat consumption would have the same impact as switching from a standard sedan (e.g., Camry) to an ultra-efficient vehicle (e.g., Prius).
